Pinnable Me: Basket Organization

Happy Friday luvs!

I am a huge fan of being organized and really feel that baskets are the way to go.  There are so many uses for them and they look great in every corner of your living space.   I use baskets in my bathroom and closet and they have really helped keep things in order.  My next project is to tackle our pantry which is in need of some basket reorganization.  I found many different uses for baskets this week and they are so functional!

On the Go: Egg Muffins

Happy Tuesday luvs!

As mentioned in last week’s VLOG, I am making some changes around here.  One of them being, focusing my Tantalizing Tuesdays around on the go meals for us folks who are busy bees!  I have been researching recipes and was so excited to stumble upon Blogliates and found this amazing recipe for egg muffins.  I have made two batches of these and the following recipe works for me.  I don’t own a microwave so I reheat 2-3 of these per morning under my broiler.

Yields:  12 egg muffins.

1 red pepper or your favorite red veggie

bunch of fresh basil leaves, chopped.

scallions (if you need extra flavor, I sometimes use these, I sometimes don’t)

3 whole eggs

2 cups of egg whites

Chop veggies and mix together in a bowl.  Whisk egg and egg white together in a bowl.  Season with salt and pepper.  Line your muffin cup or spray PAM.

Fill your muffin cups with a tablespoon of your eggs then distribute your veggies in each cup.

Fill the rest of your cup, all the way to the top with your eggs.

Bake at 375 degrees for 30-40 minutes until firm on the top.

Sometimes I don’t want to dot my “i’s” …

or cross my “t’s”.  Do you ever feel that way?  That even though it has been completely your choice, you have created an expectation that eventually becomes to stressful to obtain which leaves you with guilt that you are disappointing people.

Raise your hand, my fellow control freak, type “A” friends, we have all been there.

In my quest for bringing more peace and harmony into my life, I still tend to get wrapped in the crap and forget to breathe.  Which clearly defeats the purpose of seeking more peace and harmony.  Then comes the burn out stage and I can’t meet the expectations I set for myself in my many commitments and that makes me feel like I disappoint people.  Even though I know those around me understand I’m a human being and we all have our saturation points.

I’m really trying to get over this and be open to these human moments happening.  But I struggle with it because I an UNABLE to PLAN for it.  That sounds terrible but it’s true.  I have to get over the fact that I can’t control everything and I just need to let go and have some fun.

And that’s it okay not to dot my “i”s and cross my “t”s.

Thursday Latelies: Whew!

Hello Friends!  I’m sorry it’s been a week since my last post/VLOG but life has been very hectic and crazy! I’m still trying to wrap my head around everything going on but it’s very exciting!

Shifting my point of view…

Hello luvs!

I trust everyone had an amazing weekend!  The weather was a bit cold and damp here which prevented me from participating in my 5k race.  I chose to do this because with how busy I am during the week, I didn’t want to get sick.  More serious runners would probably scoff at my decision but running in cold rain just doesn’t appeal to me.   There will be other races to run.

Speaking of our bigger “race” of life…

I am really trying to grow into a person that honors herself and not worrying about what others think.  I know I’m in a different place than a lot of people my age and I understand that people may think that’s weird or that I have done something wrong.  There are many things my friends have right now that I want.  I want a loving and supportive husband and a beautiful family but I don’t want to welcome those things into my life until I feel okay with my own self and my career situation.  I’m a strong woman in a lot of ways and I want to be with someone who honors that.  And if I have to keep waiting, so be it.

I have an amazing group of family and friends that honor me, challenge me and give advice when needed.  I’m in a good place right now and feel fulfilled in a lot of ways and I always try to keep my bucket full.

And when you continue to maintain an energy like that, the right person will find you.

Speaking of changing my point of view, I love my blog which has been from my point of view but it needs a makeover.  I have found the best designer and will reveal her name soon but I cannot wait to see what she does with this little home of mine!
