Sex and the City II-The Deeper Meaning

First of all, if you haven’t seen Sex and the City II yet, you may want to stop reading.

If you have seen it, I would be interested in your opinions.

Most people go to the movies because they want to escape reality for a while.  They don’t want to have to think too hard, they just want to kick back with their soda and popcorn and enjoy themselves.  Sex and the City II is an enjoyable and fun movie.  The clothes of course are to die for:

Our favorite characters are predictable as usual:

But there is one element that may cause a little stir and I am not talking about Samantha’s choice of dress.  I am talking about the deeper meaning in this movie.

Deeper meaning? I know what you are thinking.  I didn’t spend 7 bucks for a movie ticket plus another $15 on snacks to explore a deeper meaning.  It’s Sex and the City for goodness sake.  I want to see fabulous clothes, shoes and the beautiful setting that is NYC and the Middle East.   I want to the see the ladies that I live vicariously through even though they are fictional characters.

No worries, you’ll get that but the plot line of this movie brings us a little deeper into the inner workings of everyone’s favorite fabulous four.

Which is maybe why most critics have panned it.  It isn’t as fun as the first one but you have to remember the origins of Sex and the City.  It’s about the relationships these women have and relationships can be hard.  Things the movie may each you:

Space (with boundaries) in relationships is important.

Engagement/wedding rings DO mean something.

Sometimes it’s okay to be discreet.

If you play with fire, almost always you will get burned.

Sometimes mommies need time out too.

I don’t want to completely spoil the movie for my readers who haven’t seen it but please go see it.  If you have, fire away…

Wednesday Wisdom: Restaurant Etiquette

We all love dining out and for most of us, that has been cut out of spending or limited due to the economy. Most restaurants are hitting their seasons right now and are very busy. Some things to keep in mind:

1) Call to inquire about reservations or call-ahead seating. Most restaurants do take reservations or at least call-ahead. However, if they don’t, ask about approx. wait times or what the busiest nights are. Always be honest about how many are going to be in your party. It is always better to over count than under count.

2) Menus: Most restaurants post menus on their websites. However, sometime they can’t keep up. If you are interested in a certain item or how it is prepared, pick up the phone. A staff member should be happy to explain or clarify.

3) Flexibility: Sometimes things happen: reservations are lost, things are busier than anticipated, etc etc. A good hostess or matre d’ or manager will do everything in their power to fix it but please allow them the time to do that.

4) Troubleshooting: If you have an issue, SAY SOMETHING! Saying it after the fact or posting a bad review on a website doesn’t fix the problem. Ask to see the manager, explain your concerns. It’s that easy. The staff doesn’t know your sides are cold unless you tell them after the first bite.

5) Tipping: Bartendars (especially if they serve you) and servers should be tipped. Their hourly wage isn’t much so if their service is excellent, reward it. 18-20% is considered to be excellent.

And finally, people who work in restaurants are human beings who may have families, hardships, other jobs, etc.   They are not a lesser human being because of working in a restaurant.  Treat them as you would like to be treated.

My love affair with Chocolate

As I was perusing our home library, I stumbled upon this book:

It’s probably good that we’ve had this book for years and I’ve only now just discovered it. My waistline is thanking me.  This book has everything from desserts to coffee drinks.  It even provides tips and techniques for cooking with chocolate.   I would live on chocolate if I could.  I have zero willpower when it comes to it.  DISCLAIMER:  I do not like white chocolate.  Sorry but  I don’t.  Give me milk or dark and I’m your girl:)  Anyhow, my mother’s birthday is coming up and she wants a cake.  A homemade cake.  I could be more handy in the kitchen so I am taking up the challenge.  My idea is a bit ambitious for a novice cook:

A red velvet cake

With chocolate ganache filling

And a light fluffy butter frosting

Plus…

handmade truffles on top

Any advice or a recipe for a red velvet cake would be appreciated:)

Wednesday Wisdom: Listening to children

If we would listen to our kids, we’d discover that they are largely self-explanatory.  ~Robert Brault

I don’t have any children but I do want one or two or maybe three one day.  I am around children often enough though to understand the magic they possess.  They have the most amazing ways of communicating with one another.  And they have so much to say…but do we listen enough?  When I was young, my mother allowed us to talk at the dinner table (I know several people who were not allowed this option growing up).  I asked her the wisdom around all this and she simply put, “I wanted to hear about your day and what things you discovered.”  This proved crucial during my elementary years as it was discover during these conversations that I was being bullied (verbally) at school.  If I hadn’t felt comfortable talking, they wouldn’t of been able to help me.  Children just want to be listened to and not hushed or shushed or whatever.

The children I have encountered have taught me a lot.

Savory Sandwiches

I try to be creative when it comes to my lunch or even a casual dinner but sometimes all I’m craving is a savory sandwich.   I have had plenty of good sandwiches in my time, my favorite from Dean & Deluca in Charlotte.  What is in my favorite sandwich you ask?

Ciabatta Bread, Black Forest Ham, Caramelized Onions, Honey Mustard and Brie Cheese.

Clearly I ignore the calories that go along with this indulgence.

Here are some other delights courtesy of the Food Network, that I stumbled upon this morning:

Roasted Pepper & Goat Cheese Sandwiches

Ingredients

  • 4 large red or yellow bell peppers, preferably Holland
  • 2 tablespoons good olive oil
  • 1 tablespoon balsamic vinegar
  • 2 cloves garlic, minced
  • 2 teaspoon kosher salt
  • 1 teaspoon freshly ground black pepper
  • 2 tablespoons drained capers

For assembling:

  • 1 large ciabatta bread, halved horizontally
  • 1 (11-ounce) garlic-and-herb or plain goat cheese (recommended: Montrachet) at room temperature
  • 8 to 10 large basil leaves
  • 3 thin slices red onion
  • Kosher salt and freshly ground black pepper

Directions

Preheat the oven to 500 degrees F.

Place the whole peppers on a sheet pan and place in the oven for 30 to 40 minutes, until the skins are completely wrinkled and the peppers are charred, turning them twice during roasting. Remove the pan from the oven and immediately cover it tightly with aluminum foil. Set aside for 30 minutes, or until the peppers are cool enough to handle.

Meanwhile, combine the olive oil, balsamic vinegar, garlic, salt, and pepper in a small bowl. Set aside.

Remove the stem from each pepper and cut them in quarters. Remove the peels and seeds and place the peppers in a bowl along with any juices that have collected. Discard the stems, peels, and seeds. Pour the oil and vinegar mixture over the peppers. Stir in the capers. Cover with plastic wrap and refrigerate for a few hours to allow the flavors to blend.

To assemble the sandwiches, spread the bottom half of the loaf with the goat cheese. Add a layer of peppers and then a layer of basil leaves. Separate the onions into rings and spread out on top. Sprinkle with salt and pepper. Cover with the top half of the ciabatta and cut into individual servings.

Caponata Picnic Sandwiches

Ingredients

  • 1/4 cup olive oil
  • 1 celery stalk, chopped
  • 1 medium eggplant, cut into 1/2-inch pieces
  • Salt
  • 1 red bell pepper, cut into 1/2-inch pieces
  • 1 medium onion, chopped
  • 1(14 1/2-ounce) can diced tomatoes
  • 3 tablespoons raisins
  • 1/2 teaspoon dried oregano leaves
  • Freshly ground black pepper
  • 1/4 cup red wine vinegar
  • 2 teaspoons sugar
  • 1 tablespoon drained capers
  • 1 loaf ciabatta bread, cut crosswise into 6 equal pieces
  • 2 garlic cloves, peeled
  • 6 slices (1/3-inch-thick) drained fresh water-packed mozzarella

Directions

Heat 1/4 cup of the oil in a heavy large skillet over medium heat. Add the celery and saute until crisp-tender, about 2 minutes. Add the eggplant and saute until beginning to soften, about 2 minutes. Season with salt. Add the red pepper and cook until crisp-tender, about 5 minutes. Add the onion and saute until translucent, about 3 minutes. Add the diced tomatoes with their juices, raisins, and oregano. Season with salt and pepper, to taste. Simmer over medium-low heat until the flavors blend and the mixture thickens, stirring often, about 20 minutes. Add the vinegar, sugar, and capers. Season with salt and pepper, to taste.

Cut the bread pieces horizontally in half. Grill the bread cut-side down on a grill pan over medium-high heat until golden, about 2 minutes. Rub the whole garlic cloves over the toasted side of the bread. Add a slice of mozzarella to bread bottom, spoon the caponata on top, cover with the other bread half, and serve.

To take for a picnic: Wrap the sandwiches separately in plastic wrap or parchment paper. Chill until ready to serve, or keep at room temperature up to 1 hour.

Monday Musings: The gift in things…

Happy Monday Readers!

I hope you enjoyed your weekend and all you mommies, grand-mommies, sudo-mommies, God-mommies, critter-mommies, etc etc enjoyed your day yesterday!  Seeing my wonderful mother open her gifts yesterday got me thinking about the quote, “See the gift in everything…”

Do any of you find that really hard?

I like most human beings, struggle with seeing the gift in things during the bad or ugly situations.  I’ve had a few over the past couple of weeks but as time has past, I’ve realized why I had to endure the pain and in a certain situation, the heartbreak.  But life is not always pretty folks and sometimes you have to sit back and say,

“What can I learn from this?”

The truth is we can learn a lot from all situations in life.  For instance, I just heard news that there will be more budget cuts for the education field next year, in fact it is supposed to be worse than last year.  For those of you who read this blog of mine and know me, I am a certified teacher and finished my certification last May.  I didn’t secure a full time teaching gig so I have been juggling working as a hostess at a restaurant (where I have been for nearly three years) and substitute teaching.

I did a some relfecting today on the “gifts” of this scenero:

*I love my jobs.

*I have two different jobs in this unstable economy when some people can’t even find one.

*I do well at both of them and have learned a lot from both of them.

*I have gained A HUGE support system/extended family from one.

*Oh and I met the President of the United States…no biggy;)

I’ve realized recently that if teaching doesn’t work out next year or the year after that or never, that’s okay.  I’m okay.  I have everything I need right now…

Monday Musings: May Days

May…

Where did April go?  I swear it was April 1st just days ago.  At any rate, life seems to be moving fast.  I didn’t have the best week so I am hoping May blooms a much prettier bouquet for me.  I’ll spare details but in a nutshell:  I ended a 6 year friendship and our neighbor died only 2 months after her husband did (leaving behind 2 boys, ages 23 and 27 respectively).  However, I did find out I won two of this wonderful Stila gift set from Sephora from a Mother’s Day Giveaway on their blog.  So hopefully things are turning around.

In other news, I continue to work hard at well being me.  I am starting to learn that if you are just yourself as much as possible, then people have no room to question.  I am over trying to defend myself all the time.  I know people comment all the time about how strong I am considering what my family has dealt with over the past years.  “Normal” is just a setting on the dryer.”  ~Barbara Johnson.  I know that I am not alone and that all families have their issues.  However, I was determined this year as I approach age 30 to start being healthier about how I deal with things and making more time for myself.  I am used to holding anger and sadness in and not dealing with it properly.  As most of us know, this is not healthy and can cause problems down the road.  I am proud to say I have gotten better about this.

It’s also amazing to to me how this social networking world (mostly blogging and Twitter) has become another support system for me.  I had a fellow blogger/tweeter offer to lend her ear about my broken friendship.  It was comforting to me to know that someone who has never met me can allow me to vent.  (Thanks JGIWC!)  I know some of my friends make fun of me for blogging but I love that it is part of me life.  I am so grateful that so many people read this blog and it motivates me to a better writer.
