Tasteful Salads

Most of my friends accuse me of eating like a bird and I have been called “nuts & berries” more often than I’d like to admit.  First, of all I am 1/2 Italian and 1/2 French so I LOVE to eat!  I enjoy my food and I *try* to be healthy as much as possible.  I enjoy cocktails and have a killer sweet tooth as well;) However, my favorite things to ear are salads with variety of color and tastes.  Here are two I found and can’t wait to try!

Spinach and avocado salad w/ sesame wasabi dressing
serves 4 as a side salad


4 big handfuls baby spinach leaves
1 large avocado, diced
1 Lebanese cucumber, finely sliced into half moons
1 tablespoon sesame seeds

dressing:
1/2 lime, juiced
1/2 teaspoon freshly grated wasabi stem (or more, to taste)
2 tablespoons soy sauce
2 teaspoons sesame oil
1 tablespoon peanut oil
1 teaspoon rice wine vinegar
ground white pepper, to taste

1. Place all the salad ingredients, except the sesame seeds, into a large bowl or platter.

2. Whisk together all the dressing ingredients in a small bowl. Drizzle over the salad and toss lightly to coat.

3. Sprinkle with sesame seeds and serve.

Caprese Salad


Ingredients:
- 1 large tomato, sliced into 8 slices
- 8 oz fresh mozzarella, sliced into 8 slices
- 5-6 basil leaves, sliced or whole
- 1 tbsp extra virgin olive oil
- 1 tsp balsamic vinegar
- salt and fresh pepper

Directions:
Place sliced tomato on a large plate or platter. Whisk together olive oil, vinegar and salt and pepper. Top tomato slices with mozzarella and then drizzele olive oil and vinegar mixture over all the slices. Spread basil leaves evenly over all slices.

Entire recipe makes 8 servings
Each serving = 3 Point Total

A Saturday evening like no other…

*What I am about to share is my personal account of working at The Corner Kitchen the night President Barack Obama, First Lady Michelle Obama, their friends, staff and secret service dined with us.  I voted for Barack Obama in the November 2008 Presidential Election and was very honored to be part of this special evening .  I am using my blog to share the story as asked by many relatives, friends and readers.  You certainly have your right to your personal or political beliefs about the Obamas BUT please refrain from mentioning them if you comment on this post, which I would love!  I do not wish to start a political debate; only to share the story as a writer/observer.  Thank you:)  Enjoy!

Let me back up to Thursday night when I received a call from a young man checking on his girlfriend’s reservation he had made for Saturday night for 6 people at 7:30pm.  He revealed to me that he was proposing and asked if they could have the room to themselves (we have two upstairs rooms, The Sisal & Chocolate Rooms).  He then talked to my manager and he reserved the room.  Since I’m a wedding fanatic, I was so excited some lucky girl was going to get engaged in our restaurant.

This particular Saturday night started out pretty normal for myself and the rest of the staff.  My manager and I had already decided that Obama was not going to show up…I anticipated a busy but typical night.  And of course I was way excited about the proposal.   Little did we know…

At 7:15 on the dot, this young man showed up with a friend of his.  I said, “You must be my “groom-to-be”.”  He smiled and said “yes, May I go check out the room?”   He went upstairs, came down and asked to speak to Tracy.  It was at this moment, I noticed a few police cars, and some secret service men on our front porch.  My manager, Tracy soon appeared and with the most stoic expression, informed that I was not to sit any additional reservations upstairs.  At the same moment, a woman came through the door and gave me her name.  She had a reservation she informed me but said , “I would like to eat where the rest of the staff eats.  They should have a reservation as well.”

It was at that heart stopping moment, it hit me.

The President of the United States was coming to The Corner Kitchen to eat dinner!

What followed was a bit of craziness…decisions if the staff would eat upstairs in the other room or downstairs, conversations with secret service, staff and Christina (the lucky server who got to wait on them).  Eventually it was decided The Obamas would eat in the Sisal, some secret service would hang out in the Chocolate Room, the staff photographer and press woman would eat on the porch and the remainder of the staff would eat at the bar.

Soon after that, the President and First Lady entered the restaurant and went upstairs.  On the way, the President wished someone in the Parlor a Happy Birthday.  After they got settled, I was permitted by secret service to go up and give their table menus.  Usually I give out menus, tell people to have a nice meal and come back to my station.  Before I could go, Michelle Obama asked me what was good on the menu, I turned and recommended the following items:  Mahi-Mahi, Corn & Crab Chowder, Lobster Tacos and the Meatloaf (although I told the President it wasn’t as good as my mother’s)  That got a laugh.

I returned to my hostess station to man the phones…and to get to know the secret service folks who rotated in and out of that area.

Meanwhile, my phone rang every second and by the way, we have 3 lines.  I was asked by secret service and my manager to honor the remaining reservations but to tell anyone else who called in that we were booked.  And believe me they called.  I couldn’t keep up!  One of the owners got through after getting a tip from family that was dining with us that evening.  That conversation went something like this:

Me:  Good Evening, thank you for calling The Corner Kitchen, this is Adrienne, how may I help you?

Kevin:  Hello Adrienne, is anything unusual going on down there?

Me:  Yes!  The President is here and I am FREAKING OUT!

Kevin:  Okay, I’m coming down.

The owners and their families soon arrived and we tried to operate as normal as possible.  I was dizzy with excitement and thrilled to be a part of it.

Once the meal was finished, we all waited in anticipation of their descent/exit.  As he came down, shouts of glee were heard, phones out taking pictures; he shook my hand , the hands of the kitchen staff and a few others.  He was gracious, humble and had that million dollar smile!  Michelle had already come down and was greeting some fans in the parlor.  She came over and greeted all of us, put her hand on my shoulder and said, “You are so adorable.”

I have never been so thrilled.

What a great night!

Friday Favorites: TV Top 5

Happy Friday!

The weather is beautiful and it promises to be a full and exciting weekend!   I am attending the production of RENT where my friend RTL will be playing Tom Collins tonight at Diane Wortham Theatre.  President Obama and Michelle Obama are in town this weekend.  I am hosting my friend, HMC’s shower at The Corner Kitchen on Sunday.  Whoop!

Anyhow, I am very excited to dedicate my Friday Favorites to my favorite TV shows:

Glee (Tuesdays at 9:00EST on Fox)

If you weren’t a believer or fan of Glee before, than you should go over to Fox or Hulu and watch this past week’s episode.  The Madonna Episode was AMAZING!   I was in musical theater in high school and this show brings back all those great memories.

Brothers & Sisters (Sundays at 10:00EST on ABC)

I love this show and the honesty of the plot lines and characterizations.

Parenthood (Tuesdays at 10:00pmEST on NBC)

I am not a parent (yet) but  love this show.  The first episode was silly but the plot is getting better and better.  Oh and I heart Craig T. Nelson and Lauren Graham.

SNL (Saturdays at 11:35pmEST on NBC)

Loved since high school and even the old episodes too.

Wednesday Wisdom: What not to ask…

I was substitute teaching yesterday and had a female student ask me right off the bat, “Are you married?”  “Do you have a boyfriend?”  I answered her questions and then said “Now, that you know this information, can you get on with your work?”  She nodded and went back to her seat.  My response might of been harsh on a 9 year old’s ears and I was a little worried I had been too harsh until I heard an hour later, “How old are you?”  By this point I had enough and simply replied, “That is none of your business.”  She relented and returned to her seat.

I am not totally appalled as children ask such questions however, if this behavior follows her into adult hood, I might have concern.  I’m sorry but there are things you just don’t ask someone.  Generally if it’s information people WANT to share, they will.  Period.

Monday Musings: April Showers?

Happy Monday Readers!

I know the majority of you are enjoying the weather but my poor sinus’ are screaming for a hard, amazing thunderstorm with lots of rain.  I have a blue car, it is now a shade of green with the pollen coating.  I have washed it a couple of times but the disgusting mother nature paint job returns almost instantly.  I really am wishing for some April Showers to finish out the month.  (Is this year flying by or is it just me?)

Speaking of April Showers, I am throwing one for a friend of mine at the end of the week.  It’s a little unconventional as we are gathering for Brunch at one of HMC’s favorite restaurants and asking everyone to dutch treat. The bride of course is taken care of.  I know Emily Post would kill me but at the bride’s request she has asked her hosts not to spend a whole bunch of money.  She is just happy for the gathering of good friends and of course a mimosa or two. I am making an awesome and very green party favor and I couldn’t be more excited.  I’ll wait to share until next week as HMC reads my blog and I don’t want to spoil it!

As Spring moves along, I will continue to be busy as a I move into my Corporate Secretary position for my local Junior League which involves planning our Leadership Retreat in June.  This year coming up with be only my 4th active year and I am so honored to serve on the Executive Board so soon!  Also, I am trying for the 2nd year in a row to get a teaching job for Fall.  I hope it works out this time!

Monday Musings: “Growing Up”

Life continues to tick along and as Spring quickly approaches, I keep wondering if things will pan out for me.

I am okay with working part time and having a more flexible schedule particularly during the day but the desire to have full time employment is weighing heavily. I know I should be grateful for what I do I have and I am. Also I have to know that there are a lot of people in our country and globally that are struggling. I’ve struggled always to live in the present, instead I obsess about the future. I feel like sometimes a lot of my friends are away ahead of me (full time gigs, pursuing advanced degrees, marriages, babies, house buying) in the grown up departments. I was a “grown up” right after college but it wasn’t what I was supposed to do so I boomeranged back home. I enjoy living where I live, I enjoy my job and really they have given me a lot more than a job, an extended family. I enjoy my work with the Junior League and can’t wait to start my placement as Corporate Secretary. But when your nearly 30, especially down where I live, it’s hard to explain to people why you haven’t done some of those grown up things.

Should I have to explain or defend myself?

Tantalizing Thursday: Healthy Pasta!

As I was thumbing through an issue of Family Circle Magazine at my chiropractors office the other day, I stumbled upon some really great recipes.  This one particularly caught my eye because it was a pasta dish.  If you are a pasta freak like me, this would excite you especially.  Pasta dishes do contain a lot of carbohydrates and this one is no exception but when combined with healthy ingredients, you can still enjoy a great pasta dish and maintain you health goals.  I cannot wait to try this one!

Angel Hair with Arugula Pesto and Salmon

Ingredients

  • 2 cups baby arugula leaves
  • 3/4 cup basil leaves
  • 1/2 cup toasted hazelnuts
  • 2 cloves garlic, peeled
  • 2/3 cup extra virgin olive oil
  • 2/3 cup grated Parmesan
  • 1-1/4 teaspoon salt
  • 1-1/4 pound salmon fillet
  • 1 cup dry white wine or vegetable broth
  • 1 pound angel hair pasta

Directions

1. Pesto: In food processor, combine arugula, basil, nuts and garlic. Process 1 minute. Gradually add oil and process until blended. Add cheese and salt; process until smooth. Set aside 1 cup for recipe. Refrigerate remainder for another use (up to 1 week).

2. Salmon and pasta: Place salmon fillet in a large nonstick skillet. Add wine and bring to a boil over medium-high heat. Reduce heat to medium-low and simmer, covered, for 10 minutes or until fish flakes easily. Remove from poaching liquid; keep warm. Discard liquid.

3. Meanwhile, cook pasta following package directions, 3 minutes. Drain, reserving 1/2 cup of the water. Toss drained pasta with 1 cup pesto and 1/4 cup of the pasta water, adding more water if needed. Remove skin from salmon; discard. Flake fish into pasta.
